Summer is coming and that means summer snacks! Guacamole is probably my No. 1 snack this summer, I’ve already enjoyed it a few times with avocados being in season at the moment.
Nairn’s oatcakes and biscuits are a great alternative to crackers, wheat free, are full of complex carbohydrates, high in fibre, both soluble and insoluble fibre and a source of key nutrients.
I’m sharing with you today a easy and delicious Guacamole recipe. It’s close to a traditional guac, but has a kick.
Lime and Jalapeno Guacamole
What you’ll need:
- 2 ripe avocados, roughly mashed
- ½ small red onion, finely chopped
- Juice of 1 lime
- 1 Tbsp og Jalapeno sauce or ½ red chilli, deseeded and finely chopped
- Salt and pepper to season
- Nairn’s Gluten Free Oatcakes to serve
Add all ingredients to a bowl. Mix well. Season with more salt and pepper before serving.
I recently gave away a prize pack which included: Nairn’s Scottish Oatcakes, Organic Oatcakes, Dark Chocolate Chip Oat Biscuits, Stem Ginger Oat Biscuits, Mixed Berry Oat Biscuits, and a limited edition Nairn’s tin to keep your open oatcakes fresh.
My favourite is the Scottish Oatcakes and Dark Chocolate Chip Oat Biscuits – which are great in baking and use as a cheesecake base FYI. Check out some more recipes using Nairn’s oatcakes
